Pork Belly Strips with Korean Style Cous Cous & Sesame Pak Choi

Oven temp. 450 ℃
  • 8 x 1inch strip of pork belly, fat trimmed
  • For the marinade;
  • 1tbsp Soy sauce
  • 330ml Lilt (the fizzy drink)
  • 1tbsp Sesame oil
  • 1tsp Chopped ginger
  • 4 Cloves garlic, crushed
  • 1 Bunch of spring onions, green only, chopped
  • 1tbsp White wine
  • 2tbsp Caster sugar
  • 1tsp Sea salt
  • 1tbsp Chilli flakes
  • For the couscous;
  • 300g Couscous
  • 300g Chicken stock
  • 1 Bunch of spring onions, white part only, chopped
  • 1/2 A cucumber, core removed and finely chopped
  • 1 Bunch coriander leaves, chopped
  • 3tbsp Soy sauce
  • 3tbsp Sesame oil
  • 4tbsp Toasted peanuts
  • For the Sesame Pak Choi;
  • 2 Heads of pak choi, quartered and bottom root removed
  • 2tbsp sesame oil
  • 1tbsp soy sauce
  • 2 tbsp sesame seeds
  • The list of ingredients here makes the recipe look more daunting than it actually is! Once the pork is marinated, the cooking process is quick and straight forward but will look great as an impressive dinner party dish in Roccbox if you’ve got guests over!

    Combine the marinade ingredients together in a bowl and add the pork belly strips – tossing and rubbing to ensure they’re well coated. Leave to marinate for 4 hours but ideally overnight.

    When the time comes to cook, pour the hot chicken stock over the couscous and cover with a tea towel for 10 minutes before breaking up with a fork and adding the other ingredients.

    While a grill pan is heating in Roccbox, remove the pork from the marinade, shaking off any excess and pop into the hot grill pan.

    Move the strips around regularly until they have blackened all over, adding some of the marinade here and there, cooking for around 8-10 minutes in total. Set to one side to rest.

    Pop the pak choi in a tray with the sesame oil and soy and put into Roccbox for around 1 minutes – rotating if required. Add the sesame seeds and pop back in for another 30 seconds or so.

    Lay the three elements out on the table and get stuck in!
