The Red Onion Marmalade, Anchovies and Goats Cheese Pizza

2 Balls of pizza dough
250g red onion marmalade
170g goats cheese, roughly crumbled
4 tbsp sliced black olives
18 anchovies in sunflower oil
4 sprigs of thyme, picked
The French’s answer to pizza is called Pissaladerie and is very similar to this! Very strong, robust flavours make it unmistakable French in origin. You can use shop bought red onion marmalade, or make a batch of your own- it tastes infinitely better and keeps for ages…
Stretch your dough balls into the perfect pizza base.
Top the pizza bases with the red onion marmalade, followed by the goats cheese, anchovies and black olives.
Using your Roccbox peel, move your pizza onto the stone cooking floor of your Roccbox and cook under the rolling flame for around 90 seconds, turning regularly to ensure an evenly baked crust.
Sprinkle of the picked thyme as soon as the pizza comes out of Roccbox and tuck in!
