The mighty aubergine, often overlooked yet so tasty and versatile. This recipe keeps it simple but is a great dish for any veggies or vegans you are catering for at your next Roccbox party!
Mix together the honey, soy and sesame oil in a bowl, pop the scored aubergines into a pan or tray and rub the flesh with the marinade. Cover the pan with foil and cook in Roccbox for around 6-8 minutes.
When the time is up, remove the foil – the aubergines should be softened – add 2 of the spring onions to the tray and return to Roccbox for a further 4 minutes or until the aubergine is browned and the spring onions are charred.
Transfer the charred spring onions and aubergines to a serving dish, finely slice the remaining spring onion and chuck that on top along with the chilli, sesame seeds and coriander leaves.
