Here at Roccbox HQ, chicken wings and drumsticks are regularly on the menu and this recipe is an absolute favourite. We think the Roccbox wood burner works best for this one to get that extra fiery flavour into the meat.
Coat your meat in BBQ sauce and pop into a re-sealable bag or dish and cover with cling film before leaving in the fridge for 1 hour to marinate.
Pop your chicken into a cast iron pan or metal dish and throw in some freshly chopped tomatoes and finely chopped red and green chilli before squeezing over a little more BBQ sauce for good measure.
Cover the dish with foil and pop into your Roccbox for about 5 minutes.
Remove the foil from the pan and pop back under the heat to get that crispy skin on your chicken.
Once the skin is crisp, the chicken is cooked and the tomatoes are soft and juicy, take your dish out of your Roccbox and sprinkle over some sesame seeds and squeeze on just a few more drops of sauce….yes more sauce!
