Grilled Maple Peaches, Toasted Almonds & Mascarpone Cream

Serves 3-4
Oven temp. 450 ℃
  • 4 Peaches, halved and pitted
  • Coconut Oil
  • 1 Tbsp Unsalted Butter
  • 250g Mascarpone
  • 4 Tbsp Maple Syrup
  • 2 Tbsp Demerara Sugar
  • 4 Tbsp Flaked Almonds, toasted
  • Picked mint leaves to garnish
  • Peaches are delicious in any form but grilling them like this in Roccbox gives them an amazing texture and flavour – plus the smell is incredible!

    Heat a cast iron grill pan in Roccbox until smoking hot. Rub the flesh side of the peaches with the coconut oil and add to the hot grill pan, pressing down hard on the back of the peach halves to get those sexy grill lines!

    After around 3-4 minutes, the backs of the peaches will begin to darken from the flame – this is a good indication they’ll be ready to turn.

    Remove the pan from Roccbox, pop in the butter and flip over the peaches carefully.

    Sprinkle the sugar and maple syrup over the peaches and return to Roccbox for a further 1-2 minutes.

    Fill the peach halves with the mascarpone, sprinkle over the toasted almonds and top with the mint sprigs.
