As Roccbox is coming up to temperature make the shallot pickle by combining all the ingredients and scrunching together a few times with your hands. Set to one side.
To make the pizzas, open the dough balls into pizza skins and top with tomato sauce, mozzarella, ‘Nduja, olives and chillies.
Cook each pizza in your Roccbox for around 90 seconds until evenly baked. Once done, sprinkle over some of the pickle and serve!
