You have to be careful when cooking chicken on a BBQ as no one likes a blackened outside or an undercooked middle and that same care has to be applied when cooking with Roccbox because of its high heat environment. But don’t dispair, it’s actually really easy to cook chicken perfectly in Roccbox so we put together a simple chicken salad recipe to help you get the basics nailed.
Chop your chicken into bite size chunks, toss in olive oil and add a seasoning of your choice – we’ve used some paprika and some black pepper but definitely use this step as an opportunity to get creative.
Chuck the chicken into a metal or cast iron dish and cover with foil, pop into your Roccbox and leave to cook for around 10-12 minutes (depending on the size of your chunks).
Once the times up, take the foil off, toss the chicken slightly and put the dish back in to allow the chicken to char to your taste.
We’ve served up our chicken on a bed of roasted vegetables, a few leaves, some pumpkin seeds and some pan cooked chorizo. For this recipe we also drizzled over some Sriracha sauce and sliced a few raw radishes to add bite, but any dressings and garnishes would work beautifully.
Remember when cooking meat use a probe thermometer to ensure it is cooked throughout.
