The Yellow Ricotta Pizza

Oven temp. 450 ℃
  • Dough ball
  • Ricotta cheese
  • Cracked black pepper
  • Olive oil
  • Finely chopped garlic
  • Fresh yellow tomatoes
  • Orange and/or yellow peppers
  • Basil leaves (to garnish)
  • This recipe is for all those fellow cheese lovers out there and is another great alternative to the classic tomato sauce. To add to the overall ‘yellowness’ we’ve topped this little number with yellow tomatoes and orange peppers which work perfectly with the rich cheesy base – Plus it looks super cool too.

    You know the drill by now! Stretch your dough ball out into a pizza base ensuring there is a good thick crust running around the outside – this will hold all the gooey cheese and veggies in place.

    Mix your ricotta with a teaspoon of olive oil and plenty of black pepper, then smother the base and sprinkle over a little grated mozzarella and chopped garlic before topping off with some chopped yellow tomatoes and (ideally) orange peppers.

    As with all Roccbox pizzas, pop it on the preheated stone cooking floor for 90 seconds, turning it as it cooks until the cheese is bubbling and everything looks pretty cooked. Consider chopping the tomatoes and peppers up into smaller pieces if you prefer softer veggies.

    Finish with a light sprinkling of fresh basil leaves and ground black pepper (this one goes great with a fruity white wine)

    Hot Tip – Any soft cheese works well, try replacing the ricotta with cream cheese for a gooey tartness you can’t beat!
