American Style Pancakes with Bacon

Oven temp. 310 ℃
  • 270g plain flour
  • 16g baking powder
  • 80g sugar
  • Pinch of salt
  • 260ml milk
  • 1 cap vanilla extract
  • 2 eggs
  • 80g butter, melted
  • Roccbox is great for cooking super crispy bacon – and what’s better with crispy bacon than pancakes?! Luckily Roccbox is pretty amazing at cooking those too! This simple batter is infinitely better if left to rest for a day, or preferably two!

    Put all ingredients in a bowl, except butter, and whisk together or hand blend for a few minutes until smooth. Then very slowly add the melted butter whilst continuously mixing until all combined.

    Cover and leave to rest in the fridge for between 24 and 48 hours for super fluffy pancakes. If you really can’t wait, of course you can use the batter straight away!

    As Roccbox is coming up to temperature, cook the bacon in a cold pan with a little oil- checking regularly and turning as required- until crispy. Set to one side.

    Heat a clean pan in Roccbox, with a little sunflower oil for around 1 minute until almost smoking hot.

    Remove the pan from Roccbox and carefully ladle in three fist size blobs of pancake batter before returning the pan to Roccbox.

    Cook for around 3-4 minutes or until the batter begins to set and the underside of the pancakes is golden brown.

    Remove the pan from Roccbox, add a knob of butter, allow to melt and flip over the pancakes.

    Return to Roccbox for 1-2 minutes further. Remove from the pan and plate up the pancakes. Quickly reheat the bacon in the foamy butter pan and then add to the top of your pancakes!
