Crab, Spring Onion & New Potato Hash

Serves 3-4
Oven temp. 450 ℃
  • 100g Brown crab meat
  • 400g New potatoes, cooked and quartered (or halved if small)
  • 1 Bunch of spring onions, sliced
  • 2 Tsp Smoked paprika
  • 1 Lemon, juice
  • 2 Tbsp Parsley, chopped
  • For the white crab mix;
  • 100g White crab meat
  • Pinch of cayenne
  • 1 Lemon, zest & juice
  • 80g Créme fraiche
  • 1 Tsp Extra virgin olive oil
  • Luxurious white crab and créme fraiche sits on top of comforting brown crab and potatoes in this great ‘all year round’ dish. Works equally well at lunch as it does at dinner – a proper multi tasker!

    As Roccbox is coming up to temperature, combine all the white crab mix ingredients, season well and keep tightly covered in the fridge until you’re ready to serve.

    Heat a cast iron pan in Roccbox with a couple of lugs of olive oil, season, add the potatoes and smoked paprika and cook (removing from Roccbox and shaking occasionally) for around 4-6 minutes.

    Once the potatoes are beginning to brown and crisp up, add half the spring onions and cook for a few more minutes before adding the brown crab meat.

    Remove from Roccbox, add the lemon juice, stir together well and check the seasoning, adding a touch more lemon juice if it needs it. Finish with the chopped parsley and remaining spring onion and transfer to serving plates. Top with the white crab meat mix and get stuck in!
