The list of ingredients here makes the recipe look more daunting than it actually is! Once the pork is marinated, the cooking process is quick and straight forward but will look great as an impressive dinner party dish in Roccbox if you’ve got guests over!
Combine the marinade ingredients together in a bowl and add the pork belly strips – tossing and rubbing to ensure they’re well coated. Leave to marinate for 4 hours but ideally overnight.
When the time comes to cook, pour the hot chicken stock over the couscous and cover with a tea towel for 10 minutes before breaking up with a fork and adding the other ingredients.
While a grill pan is heating in Roccbox, remove the pork from the marinade, shaking off any excess and pop into the hot grill pan.
Move the strips around regularly until they have blackened all over, adding some of the marinade here and there, cooking for around 8-10 minutes in total. Set to one side to rest.
Pop the pak choi in a tray with the sesame oil and soy and put into Roccbox for around 1 minutes – rotating if required. Add the sesame seeds and pop back in for another 30 seconds or so.
Lay the three elements out on the table and get stuck in!
