This is a great quick and easy breakfast or brunch option, but it’s delicious any time of day!
Put the oil and bacon in a pan with a little salt and plenty of black pepper and cook for 3 minutes until the bacon is just beginning to crisp.
Add the sweet potatoes, two thirds of the spring onions and chilli, the rosemary and spices and stir around so everything is nicely coated in the bacon fat.
Return the pan to Roccbox and cook for a further 6 minutes or until the sweet potatoes have begun to soften- when you check they’re soft, it’s also a great time to check the seasoning!
Push the contents of the pan to the edges and crack your egg in the centre of the pan and season the egg.
Cook for a further 2-3 minutes, sprinkle over the remaining spring onions and chilli, and eat straight from the pan.
